Kerala Spicy Duck Curry is a classic spicy duck recipe made with aromatic spices and coconut milk.This Kuttanadan duck curry is the most popular recipe in central Kerala which goes well with appams ,iddiyappam, puttu and chapathis.

Kuttanad is famous for its authentic recipes like Fish molly and Duck recipes. For keralites Duck Curry is a main recipe for there christmas menu. The flavour of crushed pepper and curry leaves makes it more delicious and yummy .I also add small coconut pieces and boiled raw banana in order give it an authentic taste. Addition of coconut milk gives the gravy a thick consistency and makes Kerala Spicy Duck Curry super delicious.

Compared to other meat duck meat is a healthier choice. It majorly contains monounsaturated fat which helps to lower LDL cholesterol and thereby reducing the risk of cardiovascular diseases. It is a great substitute for pork and beef and it is definitely healthy. I prefer country duck over broiler one because the former is soft and cooks fast as compared to the latter.

Duck can be prepared in various forms like Duck curry ,roast, dry or stew. Duck Meat has a beautiful aroma and flavor which makes it distinct from other non veg dishes. The sharpness of spices and pepper is well balanced with the richness of the coconut milk. This makes Kerala Spicy Duck Curry recipe an awesome recipe.

How to cook the duck?

Usually everyone cooks the duck with the skin. But I prefer duck without the skin since its easy to cook .The traditional way of cooking the duck is by putting it in a open vessel and cooking it in a low flame.But this is a bit time consuming so I prefer cooking in pressure cooker. The duck will be done in 2 to 3 whistles.

Ingredients for Kerala Spicy Duck Curry

  • Duck meat:1 whole duck without skin cut into curry-sized pieces.
  • Spice Powders: This recipe uses common spices like coriander powder, chilli powder ,turmeric powder, pepper powder and garam masala which are all roasted before marinating the duck.
  • Ginger+Garlic +Onion Shallots: An inevitable part of the duck curry. All are crushed and marinated along with the masalas.
  • Onion :2 big ones diced.
  • Tomatoes:2 big ones
  • Coconut Pieces: Cut in small pieces which gives an authentic flavor to the duck curry.
  • Raw Banana :Boiled with salt and turmeric. This adds an aromatic flavor to the recipe.
  • Coconut milk:1 big cup.
  • Coconut Oil: You can substitute with sunflower oil bit I prefer coconut oil since it gives the right authentic taste.
  • Curry Leaves:3 strings.
  • Green Chillies and Crushed Peppercorns: Used for extra spice.

How to make Kerala Spicy Duck Curry?

Kerala Style Spicy Duck Curry is made by the following steps:

Step1: Roast all the masalas on low flame for 5 mins .

Step 2:Marinate the duck with the roasted masalas along with crushed ginger, garlic small onion shallots oil, and curry leaves. Keep it for 30 mins.

Step 3: Pressure cook the duck for 10 mins .The duck will be cooked in 2 to 3 whistles. Next take a pan heat some coconut oil.To it add onions and coconut pieces and sauté it for 10 mins.

Step 4: Next add 2 tbsp coriander powder ,1 tbsp chili powder,1 tsp turmeric powder and sauté it for 5 mins. This is to add a little more thickness to the gravy.

Step 5: Next add tomatoes and green chilies .Sauté for another 5 mins.

Step 6: Next add the boiled duck and boiled raw banana to the curry. Cook the gravy for 10 to 15 mins in low flame.

Step 7:Next add the thick coconut milk and boil it for 5mins. Add some crushed peppercorns for more spice. Switch off the flame.

Step 8: Transfer the curry into a serving bowl and garnish with curry leaves. Your Kerala Spicy Duck Curry is ready. This is a super combo with puttu, appam idiyappam and chapatis.Try this out.

Ingredients
  

  • 1 kg Duck meat(1 whole duck without skin cut into curry-sized pieces).
  • 4 tbsp Coriander Powder
  • 2 tbsp Chili Powder
  • 1 tbsp Turmeric Powder
  • 2 tbsp Pepper powder or crushed peppercorns
  • 1 tbsp Garam Masala
  • 2 Big Onion(Diced)
  • 2 Big Tomatoes(Chopped)
  • 5 cloves Garlic(Crushed)
  • Fresh ginger(crushed)
  • ¼ cup Small red onions(crushed)
  • 4 to 5 Green Chillis
  • 8 to 9 Small Coconut pieces
  • 1 Raw banana(Boiled with salt and turmeric.)
  • 1 cup Thick Coconut milk
  • 3 Strings Curry leaves
  • Salt to taste
  • Coconut Oil(as required)

Notes

  • You can use duck with skin-on which has more fat and adds more taste to the curry.
  • You can use broiler duck if you don’t get the country one. Broiler ducks might take 3 to 4 whistles in pressure cooker to get cooked.
  • Using coconut oil is recommended for all authentic Kerala recipes.
